Roasted Golden Beet Recipe

Golden beet recipe

Golden beets have a milder flavor than red beets.  This recipe helps to highlight the wonderful flavor.  You might even confuse your guests, because they look very similar to peaches, but taste way different.

Ingredients
  

  • 1 lb. golden beets
  • 2 T. dark brown sugar
  • 2 T. olive oil
  • 3 T. balsamic vinegar

Instructions
 

  • Begin by cleaning the beets and cutting off the tops.
  • Place beets on a baking sheet and roast in a 375° oven until fork tender, about 1 to 1 1/2 hours, depending on the size of the beets.
  • Cool the beets and slip skins off when the beets can be handled. Cut in 1/2-inch pieces.
  • Combine the remaining ingredients and toss with the beets. Serve immediately.
