Our main ingredients for this week’s batch meal plan are black beans and zucchini, since they are in prime season! Plus, they are a healthy food option.

This week’s five meals tend to be a little more southwestern in nature, though they are not necessarily spicy for folks who like foods with a little kick.

The truth is that the meals below are pretty solid and deliver a great deal of vitamins, nutrients, vitamin C, and more. Here are some examples:

What can you do with it?

Most of the recipes this week serve 4, except the first day, which makes enough for 8 people.

Any leftovers can either be frozen or added to sandwich, soup or lunches. Since zucchini & black beans are currently in season, you should be able to purchase them for not much.

Here is a breakdown of the weekly batch meals:

  • Day 3 – Black Bean & Veggie Baked Tostadas
  • Day 4 – Sweet Potato Turkey Chili

What is a Batch Meal Plan & What Does it Contain?

Within you will find how to prep all the food, so for the week you will be able to quickly make your favorite dinners.

By having one grocery list, you will be able to check what is needed and probably save money by purchasing in bulk.

The other advantage is that you can easily see all the ingredients in one list. Print it so you can see it.

The one day of batch prep saves a lot of time because you do all the chopping, peeling, and washing on one day rather than before starting every meal.
