Fennel is a delicious vegetable that smells exactly like black liquorice. Do you remember what that is? No?

Well, why don’t you try it.

Even, though if you don’t like the taste of black liquorice, you will love the taste of this roasted fennel. Kids will love the taste. Be aware that fennel tends to shrink quite a bit when cooked, so, add more than you think you will need as it can be reuse in salads. The above picture only fed two of us as a side dish.

How to prepare fennel?

There are several ways to go about it.(Updated)

Slice the bulb, then place it on the root end and insert the end of a a sharp knife and cut vertically. Alternatively, once you slice it, add it to a big bowl, mix well together all the ingredients and season well.

Tip: Why not try cooking it in a pan, sauté, braise, or grilling it.

Other ways to eat the delicious fennel

There are hundreds of ways you can eat it. You can try to slice (finely) the raw fennel bulb to add a crunchy texture to salads, pastas, fish, sweetness to soups etc.

Another yummy way to enjoy it is to add it to a mix of roasted potatoes (sweet and purple) with carrots, garlic and red oignon, and let us know. 🙂

What benefits of eating fennel?

Fennel is highly nutritious, and offers a wide-variety of health benefits. That is why it is used in many kitchens across the planet. It helps support skin and maintain a super healthy heart. Provides a good amount of fibre among other great nutrients such as: vitamin C, potassium, magnesium and folate. Some experts even say that it has anticancer compounds.

Important Note: Do you have allergies? Avoid if you are allergic to celery.

Herbalists do often recommend fennel seed tea. You can make it at home as this will help your digestion, also reduce gas and bloating stomach.

Ingredients
  

  • 1 fennel bulb per person
  • 1 T. olive pil per bulb
  • 1/4 c. shredded parmesan per bulb
  • salt & pepper

Instructions
 

  • Preheat oven to 375 degrees F.
  • Cut fennel bulbs horizontally into 1/2 inch slices
  • Lay fennel in a single layer on an oiled baking dish
  • Drizzle with olive oil. And sprinkle with parmesan salt, and pepper.
  • Bake for 45 minutes. Serve immediately.
