Roasting golden beets releases sugars along with the flavors. Though sous-vide is preferable, steaming si good you if you want it to taste better.

Ingredients

golden beets
2
T.
dark brown sugar
2
T.
olive oil
3
T.
balsamic vinegar
Instructions
Begin by cleaning the beets with a small brush -then cut off the tops.
Place beets on a baking sheet and roast in a 375° oven until fork tender, about 1 to 1 1/2 hours, depending on the size of the beets.
Cool the beets and slip skins off when the beets can be handled. Cut in 1/2-inch pieces.
Combine the remaining ingredients and toss with the beets. Serve immediately.
Notes
The best way to eat your beets like any other veggie is to cook them sous-vide. It keeps the juices intact. Though you can steam it.
