1(full bunch)BroccoLeaf Wash before cutting
1tbsp Butter
2TbspOlive oilExtra virgin preferable
1HeadFresh garlicminced or sliced
1 tbsp Chili flakescrushed in mortar
1pinch Saltseason to taste

Instructions
Trim the BroccoLeaf stems where they meet the leaves. Put aside the stems for fresh BroccoLeaf juice.
Roll the trimmed leaves length-wise until you form a rolled cigar. Holding the roll with one hand, slice the leaves diagonal-wise into a thin wide shape.
Now, heat a medium-size non-stick pan or cast-iron skillet; the equivalent of 9-1/2 inches (diameter) wide. Add the olive oil and heat just until it sizzles. (test with a slice of garlic if makes this noise) - If good, add the garlic, stir and sauté until it begins to caramelize.
Add the BroccoLeaf in noodles shape, add bit of water, cover and steam for 2 minutes slow-medium heat.
Check if the BroccoLeaf is soft, with a greeny colour, season to taste with crushed red chili flakes.
