Roasted Golden Beet Recipe

Serves: 4
  • 1 lb. golden beets
  • 2 T. dark brown sugar
  • 2 T. olive oil
  • 3 T. balsamic vinegar
  1. Begin by cleaning the beets and cutting off the tops.
  2. Place beets on a baking sheet and roast in a 375° oven until fork tender, about 1 to 1½ hours, depending on the size of the beets.
  3. Cool the beets and slip skins off when the beets can be handled. Cut in ½-inch pieces.
  4. Combine the remaining ingredients and toss with the beets. Serve immediately.
